Kalua Pork with Coconut Rice

This recipe is for Rebe although I don't know if a dietitian will approve....

1 (6 pounds) pork butt roast or pork loin
1 1/2 tablespoons Hawaiian sea salt
1 tablespoon liquid smoke flavoring

1.  Leaving all fat on, pierce the pork all over with a fork.  Rub sea salt into meat followed by the liquid smoke.

2.  Cook in crock pot for 16 to 20 hours turning once halfway.

3.   Remove pork from pan and dripping (reserve) and shred.  Drain fat from dripping and mix drained dripping with meat!  YUM!

Coconut Rice

2 cups rice
1 can coconut milk plus enough water to equal 4 cups
1/2 tablespoons sugar
1 can kidney beans

Combine ingredients in a greased sauce pan and cook like normal rice!!
