Caramelized Onion Pizza

This recipe comes from my friend Emily. It's a fun change from the normal type of pizza, and has a great flavor!

Caramelized Onion Pizza

Olive Oil, For Drizzling
1 whole Large Red Onion, Halved And Thinly Sliced
2 T Brown Sugar
Kosher Salt To Taste
Parmesan Cheese, Grated
Mozzarella Cheese
3-4 slices bacon, cooked and crumbled
1 fresh tomato, chopped

Make your favorite pizza crust. Partially cook then remove from oven. (My recipe cooks for 10 minutes at 425, then put on toppings and cook for 10 more minutes)

Heat 2 tablespoons olive oil in a large skillet. Add onions and brown sugar and toss/stir for several minutes, or until onions are brown and cooked and soft. Set aside.

On half-baked pizza crust drizzle on olive oil, sprinkle on a little salt, followed by a good coating of Parmesan. Sprinkle caramelized onions and crumbled bacon on crust. Sprinkle mozzarella evenly over the top.

Bake for 1o to 15 minutes until crust is golden brown and cheese is melted. Arrange tomatoes on pizza and then serve.
