White Texas Sheet Cake

This is like Texas fudge cake, but white and almond flavored. I eat it even though I usually have some sort of allergic reaction, it's worth it! It's even better the next day. It is from one of the Taste of Home cookbooks.

1 cup butter
1 cup water
2 cups flour
2 cups sugar
2 eggs, beaten
1/2 cup sour cream
1 tsp salt
1 tsp baking powder
1 tsp almond extract
1/4 tsp baking soda
FROSTING:
1/2 cup butter
1/4 cup milk
4 1/2 cups powdered sugar
1/2 tsp almond extract
sliced almonds, walnuts, or sprinkles

1. In large saucepan, bring butter and water just to a boil. Immediately remove from heat; stir in flour, sugar, eggs, sour cream, salt, baking powder, extract, and baking soda until smooth.
2. Pour into greased jelly roll pan. Bake at 375* for 20-22 minutes or until inserted toothpick is clean. Cool 20 minutes.
3. For frosting, in large saucepan, combine butter and milk. Bring to a boil. Remove from heat and stir in sugar and extract. Spread over warm cake. Top immediately with nuts or spinkles.

We made this Sunday for our group dinner. It was super yummy! We toasted almonds for the top on half and sprinkles on the other half. Sprinkles were better. Our frosting was a little thick, so I had to add a few extra tablespoons of milk.
