

This is one of my favorite sandwiches to eat! It is similar to the quesadilla Rebe posted but does not have the broccoli in it. Last time I added the chopped broccoli; it tasted great and Alejandro didn't even notice! This is a sandwich we used to make in one of my culinary classes and we served it at our deli. It quickly became a favorite!
1 15 oz can black beans rinsed
3 tablespoons prepared salsa
1 tablespoon chopped pickled jalapeno
1/2 teaspoon ground cumin
1 ripe avocado pitted
2 tablespoons minced onion
1 tablespoon lime juice
1 16-20 inch long baguette (I like the loaves that are par-baked)
1 1/3 shredded green cabbage
Mash beans, salsa, jalapeno and cumin together in bowl. Mash avocado, onion and lime juice in a separate bowl. Spread avocado mixture on one cut side of the baguette and the bean mixture on the other. Put cabbage in the center. Cut into four pieces and enjoy!
