Spanish Rice

3 cups white rice
1 8 oz. tomato sauce
2 tsp garlic or chopped garlic
1/2 med onion, finely chopped
2 tsp chicken boullion
1 bell pepper, diced (optional)
6 cups hot water
salt and pepper, to taste

Saute rice in small amount of oil in a large pot until color changes slightly. Add remaining ingredients. Bring to boil. Lower heat, cover, and cook approximately 25 minutes or until water is absorbed and rice is cooked. You can mix in a handful of shredded cheese.
I didn't have tomato sauce one night, so I substituted liquidy salsa. All the kids like this!
