Grilled Tomatillo Chicken

From the Taste of Home. Yum- a perfect summer meal! We are becoming obsessed with tomatillos since we have tons in our garden!

4 chicken breasts
4 slices provolone cheese ( I used mozzarella)
1 medium onion, chopped
1 T olive oil
6 tomatillos, husks removed, chopped
1/4 cup lime juice
6 pickled jalapeno slices, chopped ( I just used part of a can of green chilies)
1 garlic clove, minced
1/4 cup minced fresh cilantro (Left out- we hate cilantro)
1 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper

Marinate chicken in a little oil and vinegar with some chili powder in it. Grill chicken, covered over medium heat a few minutes on each side until 170 degrees. Top with cheese, cook one minute longer until cheese melts.
While chicken is cooking, make relish. In a large skillet saute onion in oil until tender. Add tomatillos, lime juice, jalapenos, and garlic. Cook 3 minutes longer. Stir in cilantro, cumin and salt and pepper. Serve chicken with relish over the top. Can serve over rice if desired. We just had it plain.
