Eggnog Bread

Our family is obsessed with Eggnog. Eggnog french toast, eggnog pudding, eggnog pie. I'm obsessed with the soy version, Silk Nog. The kids always beg me to buy eggnog from Halloween on. Their favorite is the pumpkin pie spice kind.


I found this recipe for a quick bread on allrecipes.com, and changed it a bit.

1/2 cup butter, softened

2 tbsp oil

1 cup sugar

2 eggs

1 1/3 cup eggnog

2 tsp rum extract

1 tsp vanilla

1 small pkg instant vanilla pudding

2 1/4 cup flour

2 tsp baking powder

1/2 tsp salt

1/4 tsp nutmeg


Cream butter & sugar. Add eggs, eggnog, extracts, pudding & mix. Stir in dry ingredients. Pour into greased pan. Bake at 350*. 40-60 minutes for a large loaf, or 35-40 for small loaves.


While warm, poke holes in the top and drizzle with eggnog glaze (optional)


Optional Glaze:

Powdered sugar, butter, vanilla, and eggnog
