Honey Lime Enchiladas

This is from the Sister's Cafe blog and is excellent. A nice change from the cream of chicken type.

Honey Lime Enchiladas

1.5 lbs pork or chicken, cooked and shredded

Sauce:
1/3 cup honey
1/4 cup lime juice (of course fresh is best!)
1 Tb. chili powder
1/2 tsp garlic powder

2 (10 oz) cans green enchilada sauce (had to find in the Mexican aisle)
equal parts mixed together:
mozzarella cheese, shredded
cheddar cheese, shredded

flour tortillas (mine made ~10-12 enchiladas)

Mix together sauce ingredients and add to pork or chicken and let soak for ~30 minutes.

Spray pan and pour green enchilada sauce into pan to coat the entire bottom. Fill tortillas with shredded meat and desired amount of cheese. Roll and place in dish.

Pour remainder of sauce over enchiladas and sprinkle more cheese on top. Bake uncovered at 350 degrees for 30 minutes. Then turn on broiler and place pan near the top of the oven to brown and crisp for a few minutes.
