Tomato Tortellini Soup

Dave's in Boise this week, so I came to hang out in Layton for a few days. Mom tried this new soup, and it's really good! It's tomato-based, so it kinda tastes like noodles and sauce.
1 pkg. refrigerated cheese tortellini

2 cans tomato soup

2 cups vegetable broth (chicken works just fine)

2 cups 2% milk (does any Melville buy 2%?)

2 cups 1/2 and 1/2

1/2 cup chopped oil-packed sun-dried tomatoes

1 t onion powder

1 t garlic powder

1 t dried basil

1/2 t salt

1/2 c shredded Parmesan cheese

Additional shredded Parmesan cheese, optional


Cook tortellini according to package directions. Meanwhile, in a dutch oven, combine the soup, broth, milk, cream, tomatoes, and seasonings. Heat through, stirring frequently. Drain tortellini; carefully add to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired. *Sorry about the formatting, it was trying to publish it as one paragraph, so this is what I had to do!

We loved this soup, although will probably half the recipe next time for us!
