Best Tomato Sauce

This is Jamie Oliver's recipe and it is so good. It's full of veggies and tastes fresh and light. It takes a bit of time to make but it made ~4 batches for us so I froze the other 3 for some future easy dinners!
  • 2 small onions, chopped
  • 1 leek, trimmed and chopped
  • 2 stalks celery, chopped
  • 2 red bell peppers, chopped
  • 2 zucchinis, grated
  • 2 carrots, grated
  • Large pinch of dried oregano
  • 2 bay leaves
      Heat a large saucepan over medium heat, add a tablespoon of olive oil to the pan followed by chopped and grated veggies. Add oregano and bay leaves, then cook slowly, stirring occasionally for about 20 minutes covered until the vegetables are soft but not starting to brown.

      • 1 small butternut squash, peeled, seeded, and grated
      • 4 cans plum tomatoes with juice
      • 2 cups water
      • pinch of sea salt
      • freshly ground black pepper
      Add above ingredients to pot of veggies and bring to a boil. Let simmer for 30 minutes. Take the pan off the heat, spoon out the bay leaves and let the sauce cool slightly before blitzing with a stick blender (so wish I had one of those!) or blend in batches in food processor or blender (was ~3 batches in my blender). Makes 13 cups.
